Serves 4 to 6
Tzatziki Ingredients
2 C. plain Greek yougurt
1 lemon, juiced
2 garlic cloves, finely minced
3 Tbsp. fresh dill, chopped
3 Tbsp. fresh mint, chopped
1 cucumber
1 tsp. salt and pepper, each
Gyro Ingredients
1 lb. flank steak
1 tsp. olive oil
1 tsp. salt and prpper, each
1/4 tsp. oregano
1/4 tsp. garlic powder
4 to 6 pitas
1 tomatoe, diced
1 cucumber, sliced
1 onion, sliced
1 bell pepper, sliced
2 Tbsp. fresh parsley
For the Tzatziki peel and dice cucumber, coat with salt and wrap in a paper towel. Let cucumber rest for 5 minutes before pressing excess moisture out. Add to remining ingredients and blend until smooth.
For gyro, coat flank steak with olive oil, salt, pepper, oregano and garlic powder. Fry on high heat for 5 - 7 min. (flipping half way), or until desired rareness is reached. Let sit for 10 minutes before thinly slicing meat. Serve wrapped in a warm pita with onions, tomatoes, cucumbers, peppers and tzatziki.
