•1 lb boneless, skinless chicken breasts, diced
•6 medium, red potatoes, diced
•1/3 cup Hellman’s mayonnaise
•1 tsp Morton salt
•1 tsp McCormick’s black pepper
•1 tbsp. McCormick’s Paprika
•2 tsp. McCormick’s garlic powder
•2 tbsp. Frank’s hot sauce
•2 cups Kraft Mexican blend cheese
•1 cup bacon, cooked and crumbled
•1 cup green onion, diced
1.Preheat oven to 400 and grease a 9 x 13 baking pan.
2.In a bowl, combine the chicken, potatoes, mayonnaise, salt, pepper, Paprika, garlic powder, and hot sauce.
3.Pour mixture evenly into greased pan.
4.Bake in preheated oven for about 55 minutes making sure to stir mixture every 25 minutes.
5.Remove pan from oven and sprinkle cheese, bacon, and green onions evenly on top.
6.Place pan back in oven for an additional 5-8 minutes, or until cheese is fully melted.
7.Remove from oven and serve!!
Tip: add chopped green pepper, (and/or chilies if you like spicy) to the recipe. Also add some sharp cheddar cheese to the top when baking.
Serve with a salad (Caesar?)
