9 hard boiled eggs
1/3 cup butter
1/4 cup chopped onions (diced fine)
1/3 cup flour
2 cups milk
1 cup chicken stock
1/2 tsp salt
1/4 tsp pepper
1/2 cup bread crumbs (I prefer Panko)
2 tbsp melted butter
6 - 8 slices of well cooked bacon crumbled
After hard boiling eggs, let cool and cut in quarters lengthwise and place in single layer in greased 9x12 baking dish
Melt butter and sauté onions till cooked and translucent. Sprinkle flour and stir well. Remove from heat, stir in chicken stock, milk, salt and pepper until smooth. Return to heat and cook until smooth and creamy. Pour mixture over eggs.
Topping
Melt butter and combine with breadcrumbs. Sprinkle over eggs and top with crumbled bacon.
Bake 375 degrees for 20 minutes until bubbling and topping is golden.
You can put this altogether (minus topping) and leave in fridge overnight. Take it out of fridge, bring to room temperature and bake the next morning.
