this is one of my favorites
you can just serve this over couscous or rice
or it makes wonderful enchiladas
Ingredients:
4-5 boneless chicken breasts
1 can black beans, drained and rinsed
1 can whole-kernel corn, drained – or you can use frozen corn
1 small jar salsa, any kind
1 8 ounce package cream cheese
Instructions:
Take 4-5 frozen, yes, frozen, boneless chicken breasts, put into crockpot.
Add black beans, corn and salsa.
Cook in crockpot on high for about 4-5 hours or until chicken is cooked.
Remove chicken and shred it
Add package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
Stir entire mixture to make a sauce mix in the cream cheese.
Makes 4 servings.
most of the time I only use 2 chicken breasts.
the chicken doesn't have to be frozen and that will cut down on cooking time
I also tend to shred the chicken after it's cooked - especially if I'm serving it over rice or couscous
