Yield: Makes 1 wrap
Wraps make a great alternative to sandwiches, and you can find soft flour tortillas in the bread section of most supermarkets.
Ingredients
1/4 avocado, chopped
1 teaspoon lemon juice
1/2 medium tomato, seeded and diced
1 teaspoon sliced scallion
1/4 cup small peeled cooked shrimp
1 tablespoon mayonnaise
1/2 teaspoon ketchup
salt and fresh ground black pepper
1 small flour tortilla
Directions
Put the avocado and lemon juice into a small bowl. Toss together until the avocado is coated with the lemon juice. Add the tomato, scallion, shrimp, mayonnaise, and ketchup and combine. Season with salt and pepper. Spoon the mixture onto the tortilla and roll up. Cut in half and wrap in foil. Advise your child to unwrap the tortilla slowly as he eats, to keep the filling contained.
Recipe Tip: It's a good idea to wrap one end of the tortilla in foil so that the filling doesn't fall out when it's eaten. Your child can unfold the foil as he eats the wrap.
