Peaches 'n Cream

Pastry:
1 cup milk
1 egg yolk
2 cups Bisquick® baking mix
Filling:
1 cup sugar
1/3 cup Bisquick® baking mix
5 medium peaches -- peeled and sliced
OR 1 (29 ounce) can sliced peaches, drained
1 cup whipping cream
1/2 teaspoon ground cinnamon
Heat oven to 425. Prepare pastry: Beat milk and egg slightly; stir into the 2 cups Bisquick until soft dough forms. Turn pastry onto lightly floured cloth-covered board. Knead 10 times. Roll into rectangle 14x10 inches, using a floured rolling pin. Fold in half. Gently place in ungreased pan, 13x9x2 inches. Unfold pastry; press evenly against bottom and 1 inch up sides of pan.
Mix sugar and baking mix; toss with peaches. Spread over pastry. Pour whipping cream over peaches; sprinkle with cinnamon. Bake 20 minutes. Reduce oven temperature to 350. Bake until crust is golden brown and cream is partially set, 25-30 minutes. Let stand 30 minutes before serving. Refrigerate any remaining dessert.
