* 8 ounces fettuccine
* 3 tablespoons seasoned dried bread crumbs
* 3 tablespoons grated Parmesan cheese
* 1 tablespoon minced garlic
* 1/2 teaspoon freshly ground black pepper
* 4 boneless, skinless chicken breast halves
* 1 tablespoon olive oil
* 2 cups prepared marinara sauce
1. Prepare fettuccine according to package directions.
2. Meanwhile, in a shallow bowl, combine the bread crumbs, cheese, garlic, and
pepper. Add the chicken breasts, one at a time, and press into the mixture to
coat both sides.
3. Heat the oil in a large skillet over medium-high heat. Add the chicken and
cook, turning occasionally, for 12 minutes, or until a thermometer inserted in
the thickest portion registers 160°F and the juices run clear. Remove to a plate
and keep warm.
4. Add the marinara sauce to the skillet and cook over medium heat for 4
minutes, or until heated through.
5. Place the fettuccine on a serving plate and top with the chicken and
marinara sauce.
