3/4 cup flour
3/4 cup white whole wheat flour
1/2 cup Splenda
1 tsp baking bowder
3/4 tsp baking soda
3/4 tsp cinnamon
3/4 tsp ground giner
1/4 tsp ground cloves
1 egg
1/2 cup low-fat milk
1/4 cup unsweetened applesauce
3 Tblsp molasses
2 Tblsp vegetable oil
3 Tblsp minced crystallized ginger
Preheat oven to 350. Spray mini-muffin pan (you'll be making 18 "gems').
In a medium bowl mix together flours, sweetener, baking powder, soda, cinnamon, ginger and cloves.
In a large bowl, beat the egg. Add the milk, applesauce, molasses, oil and crystallized ginger.
Add the dry ingredients to the wet mixture and stir just until combined. Do not overmix. Portion rounded Tablespoonsfuls of batter into the cups.
Bake 15 minutes. Gems are donewhen center springs back when touched or a toothpick comes out clean.
