1/2 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup pure maple syrup
1/2 tsp vanilla or maple extract
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup flaked coconut
In a large bowl, cream the shortening and the brown sugar until light and fluffy. Beat in the egg, maple syrup, and vanilla until well mixed. Combined the flour, baking powder, and salt. Add to the creamed mixture. Stir in the coconut. Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 375 F for 12-15 minutes or until lightly browned. Remove to wire racks to cool completely. Makes 3 dozen
