Cookies:
* 1 cup butter
* 1 cup vegetable shortening
* 2 cups brown sugar
* 1 cup granulated sugar
* 4 eggs
* 1 tablespoon lemon juice
* 2 tablespoons vanilla
* 1/2 teaspoon cream of tartar
* 1 tablespoon baking soda
* 1 cup buttermilk
* 5 cups flour
Icing:
* 1/2 cup butter
* 1/2 cup brown sugar
* 1/2 cup canned evaporated milk
* 4 cups confectioners' sugar
To make cookies: Preheat oven to 325 degrees.
Beat together the butter, shortening, brown sugar and granulated sugar. Add
eggs. Beat well. Add lemon juice, vanilla, cream of tartar, soda and buttermilk.
Mix well. Stir in flour.
Drop dough by teaspoonfuls onto baking sheets. Bake 10 to 12 minutes or until
light brown. Transfer cookies to racks to cool.
To make icing:
Melt butter. Add brown sugar. Cook until thoroughly mixed
together and butter does not separate from sugar, about 10 minutes. Add milk.
Bring to a boil. Remove from heat. Let stand a few minutes. Add confectioners'
sugar. Beat with a mixer until creamy and smooth. (If icing is too thin, add a
little more confectioners' sugar.)
Spread cookies with icing.
