1/2 C cottage cheese
1/2 C cream cheese, softened
1 lb. asparagus, cooked and chopped into 2" pieces
1 tsp. orange rind, grated
1 egg, beaten
1 pkg. puff pastry, thawed overnight in the fridge
Mix the first four ingrediants in a bowl.
On a well floured surface, roll the puff pastry out very thin. (Be sure to keep roller floured, and flip pastry piece to roll each way). With a sharp knife cut the pastry into 6 or 8 equal rectangles. Put a generous amount of filling, length wise and centred, on each rectangle. Dot edges of the pastry with the egg mixture. Fold edges together and crimp around with a fork. Brush top of roll with the egg mixture. Put on a baking pan and bake in a 350 degree oven for 7 to 10 minutes, or until golden brown.
