1/2 cup (1 stick) margarine
18 graham crackers, crushed into fine crumbs
13 oz. cream cheese, softened
2 tsp. vanilla
2 eggs, beaten
3/4 cup sugar
4 tbsp. rum (or equivalent extract)
1 apple, thinly sliced
Topping
Preheat oven to 350 degrees.
In glass pie pan, heat margarine in microwave oven until melted. Mix with graham cracker crumbs in same pan. Shape into crust. Bake in preheated oven 5 minutes.
Combine cream cheese, vanilla, eggs and sugar. Mix in rum. Beat until smooth.
Pour into crust. Bake 20 minutes longer. Let cool.
Top cheesecake with apple. Spread Topping over apple. Bake 10 minutes longer.
Store in refrigerator.
Topping:
Combine 1 carton (8 ounces) sour cream, 1 teaspoon vanilla, 3 tablespoons sugar and 2 tablespoons rum (or equivalent extract) until smooth.
