White Base
2 egg yolks, beaten
2 cups cooked shrimp and crab meat
1 can mushrooms, drained (or cooked fresh mushrooms of equivalent mesurement)
1 Tbsp lemon juice
1/2 tsp salt
1/4 tsp Tobasco
Cooked rice
White Base
4 Tbsp butter
4 Tbsp flour
1/2 tsp salt
1/2 tsp Tabasco sauce
1 C cream & 1 C milk
Melt butter over low heat. Blend in flour, salt and Tobasco.
Gradually stir in cream and milk. Cook over medium heat, stirring constantly, until sauce thickens and comes to a gentle boil.
Add some white base into the beaten eggs, and then add this into the white base mixture. (this prevents the yolks from 'cooking' when incorporated into the white base)
Stir remaining ingrediants into the white base and heat.
Serve over rice, toast points or patti shells.
Can also be used as a crepe base.
