Yield: About 2 dozen cookies
2 egg whites, slightly beaten
1/4 cup butter or margarine, melted
1 tablespoon water
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
3/4 cup plus 1/4 cup sugar, divided
1/3 cup cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Peanut butter glaze (see note)
1. Heat oven to 350F. Lightly coat cookie sheet with vegetable cooking spray.
2. Lightly beat egg whites; stir in butter, water and vanilla. Stir together flour, 3/4 cup sugar, cocoa, baking powder, baking soda and salt; stir into egg white mixture. Shape into 1-inch balls. Roll in remaining 1/4 cup sugar. Place 2 inches apart on cookie sheet; press balls flat. Bake 6-8 minutes. Cool 5 minutes. Remove from cookie sheet to wire rack. Cool completely. Drizzle with peanut butter glaze.
Peanut butter glaze: In a microwave-safe bowl, put 1/2 cup peanut butter chips and 1 teaspoon shortening (do not use butter, margarine or oil). Cook in a microwave oven on high (100 percent power) for 30-45 seconds or until chips are melted and mixture is smooth when stirred.
