The waffle iron works like a sandwich maker to seal French toast together in this easy dish for breakfast or dessert. Serve with vanilla ice cream or syrup, depending on the meal.
Chocolate & Mascarpone-Stuffed French Toast Waffles
* 1/2 cup mascarpone cheese
* 1 tablespoon heavy cream
* 2 tablespoons sugar
* 6 eggs
* 3/4 cup half-and-half
* 2 teaspoons vanilla extract
* 1 pound brioche, pain di mie or challah bread, crusts removed
* 3 ounces finely chopped dark chocolate
1. In a small bowl, whisk together the mascarpone, cream and sugar until well blended; set aside.
2. In another bowl, whisk together the eggs, half-and-half and vanilla; set aside.
3. Slice the bread about 1/2-inch thick and trim so that it will fit into a compartment on the waffle iron. You should have about 12-14 slices. Spread 1 tablespoon of the mascarpone mixture on each slice. Sprinkle the chopped chocolate evenly on half of the slices, then top with the remaining slices, mascarpone side down, to make sandwiches.
4. Preheat the waffle iron to medium heat. Dip 1 sandwich at a time into the egg batter. Let the excess drip off, then place it on the waffle iron. Depending on the iron, you might not be able to fill up the whole waffle iron at one time, as the sandwiches will spread a little as they cook. Close the waffle iron and cook according to manufacturer's directions, until golden brown. Serve warm.
