Use a star-shaped cookie cutter for these cookies.
* 1 cup butter, softened
* 1 cup sugar
* 1 egg
* 1 cup dark molasses
* 2 tablespoons white vinegar
* 5 cups flour
* 3 teaspoons ground ginger
* 1 1/2 teaspoons baking soda
* 1 teaspoon cinnamon
* 1 teaspoon ground cloves
* 1/2 teaspoon salt
Icing:
* 2 cups white chocolate chips
* 4 tablespoons shortening
To make cookies:
Cream butter and sugar until light and fluffy. Beat in egg,
molasses and vinegar. Sift dry ingredients into batter. Gather into a ball.
Flatten into disk. Refrigerate at least 3 hours.
Preheat oven to 375 degrees. Grease baking sheets.
Roll out dough on lightly floured surface to 1/4-inch thickness. Cut into stars.
Arrange on baking sheets.
Bake until firm to touch, 5 to 8 minutes. Transfer cookies to racks. Cool
completely.
To make icing: Melt chocolate with shortening in a small saucepan over low heat,
stirring completely.
Dip cookies halfway into white chocolate. Place on wax paper until set.
Store cookies in an airtight container.
