1-1/2 lb. CHOCOLATE (Dark Semisweet)
12 oz. BUTTER
3 oz. COCOA POWDER
13 oz. SUGAR
20 EGG YOLKS
20 EGG WHITES
Pre-heat your oven to 300º F and grease your cake pan.
Melt chocolate and butter in a double boiler.
In a separate bowl, whip the egg whites and half of the sugar to a soft meringue.
Once the butter has melted, add the cocoa powder, egg yolks and the remaining half of the sugar and whisk.
Once the meringue is ready, fold in your chocolate egg mixture, always from the bottom up, moving left to right. Don't over mix!
Pour into pans and bake at 300 deg F for 1-1/2 to 2 hours, always checking with a toothpick.
NOTE: The cake batter is going to rise, and after cooling it will drop down. After taking it out of the oven, let it sit in the pan at least 4 to 5 hours.
