* 4 ounces unsweetened chocolate
* 1/2 cup vegetable oil
* 2 cups granulated sugar
* 4 eggs
* 2 teaspoons vanilla
* 2 cups flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* Confectioners' sugar
Melt chocolate in the microwave on 50 percent power. Transfer chocolate to a
large bowl.
Add the oil and sugar to the chocolate. Blend until smooth. Add the eggs,
1 at a time, beating well after each addition. Stir in the vanilla.
Sift the flour, baking powder and salt together. Stir into the chocolate
mixture. Cover the dough and chill several hours.
Preheat the oven to 350 degrees. Grease baking sheets.
Roll teaspoonfuls of dough into balls. Roll in confectioners' sugar. Bake 8 to
10 minutes (the confectioners' sugar coating will crack during baking).
Cool cookie on pan on rack 2 minutes. Transfer cookies to rack and cool completely.
