1 C. margarine
1 C. light brown sugar, packed
1 egg
2 C. sifted flour
1 t. baking soda
1/2 t. salt
2 C. quick oats
1/2 C. crushed Peppermint candy
Preheat oven to 375°F. Sift together flour, baking soda and salt and set aside. Beat margarine and brown sugar until light and fluffy. Blend in egg. Add flour mixture and mix well. Stir in peppermint and oatmeal, mixing well. Drop on ungreased cookie sheet. Bake for 8-10 minutes. Cool 1 minute, remove from cookie sheet. Cool completely. Drizzle glaze over cookies when cooled.
Glaze:
1-1/2 C. sifted powdered sugar
3 T. milk
3 T. crushed peppermint candy
Combine all ingredients and mix well.
It says cool completely, but if they are still lukewarm the Glaze will run slightly and that is okay (just not too warm).
