That sounds like it should work. If the shim gets in the way of something else you could grind them down like Steve mentioned and accomplish the same thing. Most trigger have plenty of extra metal to do this.
It does sound as if the bars are too close to the sear. There's not enough give in the front trigger to let the back trigger slide past.
