We have butchered yearling bulls for three years now. They are extremely lean and the meat is extremely tender. Our bulls never have any implants, so I wondered if that is the difference. My roasts and stew meat are always mouth watering and can be cut with a fork. I have noticed the steaks have quite a bit more marbling as well.
