So how is seeding done at the next conference event? By total points thus far? If so, wouldn't that put Norkap at #1 and Laservision #2 and Ressy maybe #3 or lower?

It definitely isn't total points. Teams have different amounts of tournaments played.

Average points? Still would probably be the same, Norkap #1, LV #2
