As an art therapist that has worked with both Alzheimer's and stroke survivors, I would like to only caution that the cognitive abilities of the two populations can vary greatly, depending of course on which part of the brain has been affected by the respected condition. Stroke survivors may have their cognitive ability totally intact, only their motor skill of using their voice has been damaged by the stroke. Alzheimer's patients may be able to speak fluidly even in the next to last stages of the disease, but their associations may be the opposite of what they are indeed saying verbally. Stroke survivors may not take to being treated like Alzheimer's patients.
