Omega 3,... maybe, but I stay away from bottom feeders like carp, catfish, bullheads and suckers. They have more mercury contamination and sores on their mouths and belly areas. I'm at the western end of lake Erie getting the pollution from Toledo and Detroit. If you're not too close to the Chicago lake Michigan area, you might be ok there.
I smoke wild game very lightly so as not to overpower the delicate flavor. Go to the library and you'll find all kinds of recipes and methods. ENJOY!!!
