I've just purchased a used smoker and am looking for information as to how to use it. It's the typical barrel-shaped grill with a smaller drum attached to the side for the fire/smoke. There's a round thermometer mounted in the lid of the grill portion. I'm interested in smoking wild game, namely venison, squirrels, rabbits, as well as carp and catfish (both fish good sources of Omega-3). Any recipes, information, etc. would be appreciated.
