We fillet the bigger ones and just scale and gut the smaller ones and cook them whole. I like to mix flour and cornmeal 50/50 with salt and black pepper for the breading. Another freshwater fish I love is the bluegill or bream, cooked the same way. Catfish are ok if they are big enough to make the trouble cleaning them worth while. I know older folks that will cook fish so small that I would only use for bait! Do you guys make hushpuppies with fish?
