Hey Holly,
I'm also a student who sits through lectures during the day and trains at night. I've found the most benefit in using fruits and vegetables as a source of carbs during the day. After I train I'll eat wheat based carbs to help restore glycogen levels. I've found that by allocating 50% of my caloric intake to proteins and plant fats that my energy levels are higher throughout the day, I tend to eat less, and I recover quicker. I'm believer in the glass of red wine a day too.
