It all depends on what Wing Chun Style you are taking. Some practices spend alot of time on the ground (AND THRY SHOULD) and some do not. EBMAS takes it to a whole new level. Master Emin Boztepe's Anti-Grappling tape will show you how to defend against such attacks on the ground. My school focuses ALOT on this tactic. Its well worth checking out.
But to answer your question: The softness of WC, VT, or WT surley can defeat the best of the BJJ attacks on the ground. Thats why it is SOOO important to keep up on your chi-sau, Poon-Sau and Chi-Gerk. Sensitivity is the key and can be used by all.
