First and foremost...don't step on anyone's toes. The dietary staff and nursing staff know what they know because they haven't been told differently. I would compile a list of what each diet consists of and present it to the kitchen/dietary staff and let them know that this is the information you have and find to be the safest for those patients that you work with.
