Welcome Andy...well, there are only 2 shops out this way:
www.spincitycycling.com (my fav - 620 @ Anderson Mill)
www.southwestcyclesport.com (in Bee Cave)
Neither is truly a MTB store, but they both offer MTB bikes, service, and parts. Spin City seems to be a lot cheaper in my opinion.
You then have all your bigger stores in Austin:

www.performancebike.com
There are also tons of small shops throughout the city. Hope this helps and I am sure others can add some stores they like to use.
