Good to see you!! I'm adapting your recipe for a diabetic diet. The basic change is using sprouted grain pasta and using corn starch to make the light sauce instead of refined wheat flour. Basically, I have to avoid all variations of wheat flour and stick with sprouted grain flour and/or flours that have low glycemic loads. Thanks for the recipe!
Trouble with a sociology course? How so? I promise I won't be offended even though I am a soc prof ;-) Most of all, it's exciting to hear you're back in school!!!!
Oddly, our state has one of the lowest gasoline prices in the U.S. I figured it would be a coastal state, but somehow we lucked out. There's a huge budget crunch where I work. We're fine, but we're definitely not making any extra trips to town and we won't be selling our house until prices rebound (unless one of us gets a great job in another state...which is what I'm hoping now that we've both got our doctorates).
