These are subjects I am not familiar with, and therefore unable to comment on. Perhaps you'd like to discuss this with your personal physician or a nutritionist. There is a lot of information out there in regard to various substances in foods. It can be quite overwhelming. It can also give us excuses as to why not to eat healthier, exercise more, drink water, get plenty of rest, etc. When it comes to health, I find that for me, it's "Back to basics." Too much theory can be just that -- "Too much theory." But again, if these are areas of interest for you, I would suggest talking to your physician or a nutritionist.
