Yes, the copper and zinc have an effect on deepening the colors. Copper is an essential component of melanin, which is what produces pigment in skin and hair. Most hay is very low in copper. Zinc seems to affect chestnuts and palominos (yellow colors) while copper darkens bays, blacks and helps prevent sun bleaching. Those photos were taken at about the same time of day, noon, so there is no real difference in the sun light.
