I try to do that with my horses, too. They all stop using seat and leg first, the bit is just for back up if needed. Of course, when riding to hounds on Cakes all bets were off, LOL!
When I get a chance to get back in the saddle I am going to try that on Robo Cop. I don't bother with breast collars, even on the steep trails, but I could use a piece of baling twine looped around the base of his neck in the arena. He's very smart and actually quite lazy - stopping is a good reward for him
