I can't think of quotes at the moment, but I can throw out suggestions!
Sacrifice:
There are so many examples: Sulinara describing those that remained to defend Tardos Keep, Kosar's "death", Varla's conjuring of Tiamat, Josef's return to the madness that was WW2, or just the countless times that our heroes gave up their way home.
The concept of selfless sacrifice is so much a common theme that I think it deserves one of your special treatments, Rummi.
Redemption:
Another good one would be something with Dekkion from The Quest of the Skeleton Warrior.
Of course - that episode has so many possibles it's scary!
