At first glance, it looks like a lot of food for 40 people. For the sliders, you are planning to use 12 ounces per person between 4 sandwiches, or 3 oz per slider. That's 4 good-sized sliders.
Two fullsized hotel pans of mac and cheese will feed 50 to 100 people. This depends on the depth of the pan. One 12x20x2-in. hotel pan will give you 25 servings. Two 2-in. pans should be enough. You are planning for 8 oz green beans per person. A 4-oz serving should be enough.
How are you serving the meal? Is it plated or buffet? You have much tighter portion control with a plated meal.
What's your relationship to the bride and groom?
