I like this (I don't know if a jello dessert is considered elegant, though)
Strawberry Pretzel Dessert
combine in medium bowl:
2 cups crushed pretzels
3T sugar
3/4 c melted butter
press into 9x13 sprayed pan and bake at 350 for 7 min.
Filling:
8 oz cream cheese; room temp
1 c sugar
8 oz cool whip; thawed
Cream the cream cheese and sugar together well w mixer. Add cool whip and mix in well. Spread mixture over cooled pretzel layer and refrigerate for 10 mins.
top layer
1 lg pkg strawberry Jello
1-1/4 c boiling water
(2) 10 oz pkgs frozen strawberries including juice, thawed
1 can 16 oz pineapple tidbits (not drained)
Mix Jello and boiling water and stir for 2 mins until Jello is dissolved. Add strawberries and pineapples with their juice and pour evenly over last layer. Refrigerate overnight.
