Mexican Chicken casserole question

I need to make this recipe for 45 adults, mostly men. I'm going to freeze it, this week and serve the following week. I'd like to know how long to bake it when cooked in the large aluminum pans. I have to transport it to a movie set. Any suggestions on how much to make? I would appreciate your thoughts. Thanks!
