Catering as being in business? Or is this a one-time event?
I'm a big fan of chicken hindquarters (leg and thigh). I buy an 8 1/2-oz quarter. You need 60 pieces. At 8 1/2-oz each, buy about 32-35 pounds. If you buy a 9 or 10-oz quarter, multiply 60 times the average weight of the chicken.
