When I was in food service we always counted 1/2 lb for grownups 1/4 per child over tot age. It depends on the crowd.
I'm from Tn. so when pulled pork is involved it can get uh..dangerous around the buffet. We have had some nasty fork in the hand incidents.
If you have leftovers, divid it up in meal size portions and freeze. Reheat in a low over in a covered dish with a little water in it.
