School fundraiser lunch 250 people

Hi,

We are hosting a large event, with lots of things to coordinate (music, games, auction). We like to serve a plate lunch from a booth with some options, but one or two entree choices.

We will need to coordinate the cooking among several parents. We are a fairly health-conscious crowd and will need a vegetarian option.

In the past we have done greek theme & bbq. Any suggestions for something easy to parcel out (simple recipe), popular for events? Thanks!
