The Military Recipe Cookbook suggests 11 lbs will yeild 100 one cup portions of mixed salad greens.
Howver Food for 50 suggests 10 lbs of greens will feed 50.if you pre-portion in 3oz servings. I suggest you buy some, portion and weigh so you are satified. In catering, it all depends.
