Yes you are correct, the customer is always right but if you can set yourself up as the expert and say "in our experience...
That being said you will have to guess which salad will be most popular (I suspect Caesar but it also depend which one you put first). I would do 1/43 portions of each but suspect the pasta sald won't be that popolar so guests may only take a small spoonful. As in catering, "it depends". Sometimes its just not a sala crod and they hardly touch it but load on the mash potatoes and beef (again, buffet order can be an influence). I guess your best to do 4oz each of Beff & Turkey. Kep you fingers crossed and be prepared to change the order! Of course manning he buffet with servers gives you way more control. Somedays I hate buffets...
