Since I knew the pastry chef/owner of a bakery near my home freezes her scone dough, I asked for her technique. Here's her response:
1. Make your scones.
2. Freeze the unbaked scones, wrap them though. Maybe frozen for up to 1 month. I like no more than 2 weeks.
3. Morning of event. Preheat oven. Brush frozen scones with cream. Bake frozen. They may take a few minutes more for baking. That's it!
4. Use the same technique for shortcakes and biscuits!
