I like to think that I am the Marbella King since we make tons of every year for buffet dinners. Not sure what recipe you are looking at but we have tweaked the original by using inexpensive balsamic for the vinegar. We use chicken pieces and bake it in a single layer so its nicely browned.It won't hurt no using wine.
