This is a common question and there is no easy answer when prepaaring food for a bufet. We work with volume depending how popular we think certain dishes are. For salads we figure 1/2 cup per person. Guests do ted to take a little of everything. You might want to cut your wraps in 3 to address that. The pulled pork will be most popular - at least it is in our market. Plan on 3 to 4 ounces per person.
