I plan on catering a pot luck type dinner at my reception. I have decided on making chicken marsala on a wild rice bed with veggies and a nice crisp side salad. But I was also thinking of a meatloaf dinner entree as well, for a choice. I want to hire servers because when it comes to potluck dinners at my church, by the time the kids get through the line, the food is gone by the half way point. My question is how do I ask for specific foods to be prepared? Do I give them a recipe to follow so it comes out the way I am expecting or do I allow the preparers to make it their way? Also, should I have other desserts available or would the cake be sufficient? We are not serving alcohol at the reception, so how do I serve beverages without being to tight on amounts? I think individual soda cans would be way too expensive, even liter bottles. Should I have pitchers of sparkling punch on the tables? I want it to look nice, but not be too expensive. I am a mess at this sort of thing. Any help?
