Feeding 300 Homeless

Our Bible study group is planning on serving dinner for about 300 homeless at a local shelter. There are about 12 of us dedicated to the project with the hope of doing it once a month. I need some good ideas. We will have approx. 3 1/2 hrs total to prepare before serving. Any ideas?
