I am getting married October 23rd, 2010 and have invited 520 people. I am planning on anywhere from 250 to 380 people - waiting for RSVPs. I have adequate cooking space and cooler space for the food but need help determining how much of everything I will need. I am having a buffet style dinner at 6pm. The menu includes: Scalloped potatoes with ham (this is together not seperate) and I will be using the scalloped potatoes in a box such as Simplot or something similar - believe the size is 2.5 pounds and serves 32??, Green beans or Corn, cole slaw, and a dinner roll. I also need to know how many roasters I will need for the scalloped potatoes and ham as well as the approximate time it will take to make.I plan on making the scalloped potatoes and ham the day before the wedding but really scared it will turn out mushy. The other options I have considered is making pulled pork sandwiches or lasagna. Could you please let me know how much meat i would need for the pulled pork and what kind of pork I should use? Pork sirloin roasts are on sale for $1.68/pound right now. How many 9x13 pans of lasagna?? Any help is greatly appreciated. I hope I have included enough information for you to help me.
