I 2n d the pulled pork idea. Another one would be to do Hot Beef sandwiches. the beef can be made ahead of time and reheated in the roaster. I agree to move the roasters outside and cook there.
When I have had large crowds for a long weekend I have cooked a large turkeyin the roasters outside on my deck. I serve it with a large salad and bread ( grilled garlic bread for example) of some kind. It's delicious and quite unexpected in the summer time.
